Steely mineral nose with rose petal and strawberry notes complementing the minerality. Has a great combination of plush texture with bright acidity that gives this a fine balance of unctuousness while being totally bright and refreshing. Makes for a deceptively easy wine to drink. On the palate, the complex flavors show white peach, strawberry, citrus and herb notes and finishes long and fresh.
The Dakota Shy Rosé of Cabernet is made in the saignée-style. We “bleed” small volumes of juice from our freshly harvested and crushed Cabernet tanks and then ferment those in stainless steel barrels. Using a range of white wine yeasts and a long cool fermentation between 45 to 50 degrees – we craft a complex, dry and refreshing Rose.
